Joshua Ortiz is executive chef at Rio Chama Prime Steakhouse. Born and raised in Santa Fe, he attended Santa Fe High School and graduated from Santa Fe Community College. In the late 1990s and early 2000s he started washing dishes, then soon after began cooking and quickly realized that was what he wanted as a career. Soon thereafter he began working at La Casa Sena as an intern cook before moving to Santacafé and expanding his career working with David Sellers. For eight years he continued working under him and learning the art of fine cuisine before fine tuning his career with some schooling at Escoffier. Joshua also likes to hunt and fish and being from our mountain town says, “there is nothing better than organic food fresh caught and locally sourced.”Joshua Ortiz is executive chef at Ortiz Restaurant in the Santa Fe Hilton. Returning to Santa Fe, he became executive chef at Rio Chama before moving to his current position at the Hilton.
